Raw, Phew, you would not want to cook it, it would smell out the entire neighbourhood ! LOL
Seriously, dogs evolved to eat raw meat (and raw bones). See the links below for further help #

Both of my GSD b!tches are raw fed and tripe is a regular part of their diet. As somebody has already mentioned green tripe is best as it still contains the partially digested vegetable matter of the slaughtered animals last feed. All sounds gross I know, but you will find that your dog will love it. Tripe is an excellent food, high in protein low in fat, and the partially digested vegetable matter is in a form easily used by the dogs digestive system. The main drawback is the smell which is quite distinctive, vaguely reminiscent of a farmyard aroma. You certainly won’t want to cook it (unless you cook it outside!!)
The main problem is getting hold of the stuff, you’re unlikely to get it from a butcher. If you are in the UK you could look at this website http://www.landywoods.co.uk/ they deliver all my dogs food, their price and quality is excellent.
I’m glad to hear that your dog gets bones, they are SO important in a dogs diet,. Personally I would cut out dry food altogether, but thats just my opinion.

EssJay is right – definitely raw, unless you want your house to stink to high heaven. Raw is better for him anyway, absolutely no point in cooking it. You can feed it on its own – but he’ll need a great deal to fill him up. Mine nearly always have biscuit with it although some avid raw feeders will insist that you shouldn’t mix the 2 (I’ve been doing it for 30 yrs & my dogs haven’t come to any harm!)

I give my crew raw tripe on occasion. Green tripe is best but you really have to sweet talk the butcher into it since it’s not fit for human consumption. I just feed it raw. I cut it into bite size pieces and then add it to their kibble. I also cut the amount of kibble accordingly. So instead of 2 cups of kibble, I give them 1 cup of kibble and 1 cup of diced tripe. They love it, but it does tend to give them stinky farts for a few days.
